Turkey Vegetable Herb Loaf

Meatloaf made from ground Turkey mixed with fresh Tomato, Zucchini, Green Bell Peppers, Onions and Basil seasoned with Red Wine and Herbs

1 medium onion
2 small cloves garlic, minced
2 tablespoons olive oil
2 small tomatoes, peeled, seeded, diced
1/2 teaspoon oregano, dried
1/2 teaspoon basil, dried
1/4 cup red wine
2 small zucchini, quartered
2 small green bell peppers, quartered
1 cup fresh parsley, minced
6 basil leaves, fresh, minced
2 1/2 pounds ground turkey
4 slices bread, fresh, soft, diced
1/2 teaspoon white pepper
2 large eggs
2 large egg whites
  salt, to taste
  non-stick cooking spray

Cut onion in half. Roughly chop one half and finely dice the other half. Place the rough chopped onion in the Cuisinart. In a small saucepan, cook the finely diced half of the onion with the minced garlic in oil over moderately low heat, stirring occasionally until onion is softened.

Add tomatoes, oregano, dried basil, and wine, and simmer this tomato sauce mixture, stirring occasionally, for about 15 minutes. Cut zucchini into quarters and bell pepper into sixths. Place in Cuisinart with the onion. Pulse and scrape sides of Cuisinart until vegetables are fine, yet not mushy.

In a large bowl, combine chopped vegetables with tomato sauce mixture, parsley, fresh basil leaves, turkey, breadcrumbs, white pepper, whole egg, egg white, and salt to taste (about one tsp). Spray aluminum loaf pans lightly with non-stick spray and divide mixture between aluminum loaf pans. Bake meat loaves in preheated 350-degree oven for 45 to 50 minutes, until meatloaf starts to pull away from the sides of pan. Let cool. Wrap with heavy-duty aluminum foil and store in freezer.

reheating instructions:
Thaw in refrigerator the night before day of consumption. Remove from pans, slice into 1/2 inch slices and heat gently in microwave until hot.
